Fried Green Tomatoes
INGREDIENTS
1/2 cup flour
1/2 cup unseasoned bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon granulated garlic
5 medium green tomatoes, firm without soft spots
2 Tablespoons oil (your choice)*
1/2 cup soft brown sugar, optionalDIRECTIONS
Sift together flour, bread crumbs, salt, pepper, granulated garlic. Slice tomatoes 1/4 to 1/2 inch thick and press each into the flour mixture. Place floured tomato slices on wax paper for a few moments before cooking. Heat skillet on a medium flame and when it is hot, add the oil. Make sure you distribute an even layer of oil in skillet. When oil smokes, add tomatoe slices and cook each slice approximately four minutes on each side, turning when crust has browned. If you choose to, sprinkle tops of tomatoes with a little brown sugar and serve immediately. *You may have to add additional oil for subsequent batches of tomatoes. Serves 4-5
