Spinach and Tortellini soup
INGREDIENTS
2 quarts chicken or vegetable stock, seasoned
Large bunch fresh spinach, washed & stems broken off
9-12 ounces fresh Tortelloni, filling of your choice parmesan cheese
salt, pepper, and granulated garlic to tasteDIRECTIONS
Bring seasoned stock or broth to a very gentle simmer. Add pasta and simmer according to package directions until done. Add spinach and cook until wilted (approximately 1-2 minutes). Serve immediately and sprinkle with parmesan if desired.
