Mango Salsa

INGREDIENTS

1 ripe mango, peeled and cut into 1/8 inch die
1/2 cucumber, peeled, seeded and cut into 1/8 inch die
1/2 cup red bell pepper, cut into 1/8 inch die
2 scallions, fine chopped
1 Tablespoon fresh gingerroot, finely minced
4 Tablespoons fresh cilantro, finely chopped
2 Tablespoons honey
1 Tablespoon rice vinegar

DIRECTIONS

Combine all ingredients and chill for at least an hour. This recipe can be made with almost any fruit available; papaya, pineapple, fresh peaches, pears, melons, etc. Fresh mint can be substituted for the cilantro. Jicama can be substituted for the cucumber. Only the limits of your food choices restricts the ingredients of this salsa.
