Strawberry & Spinach Salad
serves 4INGREDIENTS
1 pint strawberries
3 Tablespoons sour cream
1 Tablespoon apple cider vinegar
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1 teaspoon honey
salt & white pepper to taste
5-6 cups fresh spinach, washed and dried
1/4 cup walnut piecesDIRECTIONS
Small chop three strawberries and combine with sour cream, apple cider vinegar, ginger, cinnamon and honey. Whisk together and then season with salt & pepper to taste. Set aside. Slice remaining strawberries and arrange on salad plates or platter with spinach and walnuts. Serve cold with dressing. Any smoked meats can be added to this salad. Fresh fruit and smoked meats truly compliment each other.
Seafood Citrus Salad
serves 4INGREDIENTS
1/2 pound cooked shrimp
1 pink grapefruit, cut into supremes
1 orange, cut into supremes
1/3 cup sour cream
4 Tablespoons orange juice
1 Tablespoon lime juice
1 teaspoon lime zest
ground white pepper to taste
5 cups fresh spinach, washed & dried
3 teaspoons chives, choppedDIRECTIONS
Combine shrimp, grapefruit and orange pieces. Combine sour cream, orange juice, lime zest, lime juice, white pepper and whisk together. Pore dressing over shrimp and citrus mix and toss well. Arrange spinach (or any salad greens) on plates or platter. Place shrimp mixture on greens and enjoy with gourmet crackers.
