Grilled Pizza and Thai Beef Salad

THE ROYAL HAWAIIANINGREDIENTS
2 pcs. pizza bread
1/4 tsp. olive oil
3 oz. Big Island mix greens
(romaine, arugala,radicchio, curly endive, lamb lettuce,lolla rosa)
4 oz. Kahua broiled beef (sliced thin)
2 oz. enoki mushroom
.2 oz. bean sprouts
1 tsp. basil (chiffonade)
1 tsp. mint leaves (chiffonade)
2 oz. Maui onions aulienne fine)
2 oz. Kula tomato (yellow & red seeded and cut into julienne fine)
1 oz. cucumber (seeded and cut into julienne fine)
1 oz. Thai dressing
1 oz. Hawaiian chili pepper sour cream dressingPREPARATION:
In a medium size saute pan, heat olive oil over medium/high heat. Place pizza dough inside and cook until golden brown. Turn and repeat the same process. Remove and place on a serving plate. Toss very lightly the Big Island greens, sliced marinated beef, enoki mushrooms, bean sprouts, basil, mint leaves, Maui onions, tomatoes, cucumbers, and Thai dressing in a medium size mixing bowl. Arrange the salad onto the pizza bread and dress with the Hawaiian chili pepper sour cream.
Chili Pepper Sour Cream
INGREDIENTS
2 cups sour cream
1 Tbsp. chili pepper, Hawaiian or Thai, chopped
to taste Hawaiian salt
as needed 2% milkPREPARATION:
Combine all ingredients and mix well. Keep refrigerated till needed.
Thai Dressing
INGREDIENTS
1/2 cup lime juice (fresh)
1/4 cup fish sauce
I tsp. sugar
2 pcs. Thai chili pepper (minced)
2 Tbsp. mint leaves (chiffonade)
2 Tbsp. Chinese parsley (chopped)
2 Tbsp. Thai basil
1/2 cup Maui onion (julienne fine)
1/2 cup celery (julienne fine)
1 Tbsp. garlic (minced)PREPARATION:
In a mixing bowl, combine all ingredients together and use when needed.
Beef Marinade
INGREDIENTS
1/4 cup shoyu
1 tsp. lemon grass (chopped fine)
1 tsp. garlic (chopped)
1 tsp. ginger
2 tsp. sugar
4 oz. flank beefPREPARATION:
Mix first five ingredients in a mixing bowl, then marinate beef for about 1/2 hour. Broil beef to a medium rare doneness, reserve, and slice or salad.
