Banana Layer Cake

INGREDIENTS

1 stick unsalted butter, softened to room temperature
1-1/2 cups sugar
2 eggs, room temperature
2 large bananas, mashed
½ cup yogurt OR sour cream
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 cup flour
1-1/4 cup cake flour
1 teaspoon salt
1 teaspoon baking soda

DIRECTIONS

Preheat oven to 375° F. Grease 8" or 9" cake pans generously with butter and flour. Sift together both flours, salt and baking soda. Cream butter and sugar. Adding eggs one at a time, beat mixture until light and fluffy for at least five minutes. This step add volume (air) to final cake. Add vanilla and lemon extracts and mashed bananas. Add flour mixture alternately with yogurt or sour cream, starting and ending with flour. Ex. flour-fold in gently, yogurt-fold in gently, flour, yogurt and end with flour. Pour into greased cake pans and bake for 35-45 minutes. Test cakes doneness by inserting a toothpick or skewer into center. If it comes out clean the cake is done. Any remnants of cake batter on toothpick indicates that cake needs more baking time. Frost with Cream Cheese Frosting.

Cream Cheese Frosting

INGREDIENTS

6 ounces cream cheese
2 Tablespoons sour cream or yogurt
1 cup powdered sugar
½ cups nuts, optional
1 teaspoon rum, optional

DIRECTIONS

Beat together softened cream cheese, sour cream or yogurt and rum. Blend in powered sugar a little at a time. Spread between cake layers and on top.
