2 medium size baking potatoes
1 Tablespoon oil, for baking
To bake potatoes: Preheat oven to 400°F. Slather oil all over each potato. Place on baking sheet and bake for 45-60 minutes. Push toothpick into potato to see if it is done. It should go completely through potato with no resistance.
To microwave potatoes: Prick potatoes (6 to 8 ounce size) with fork and microwave at full power for 6 minutes. Touch potatoes at end of cooking time and if they are still hard, microwave for an additional 2 minutes. Let potatoes stand for five minutes. This will complete the cooking of the potato. Check with toothpick for doneness.
To stuff potatoes: Cut open and scoop out a small amount of the cooked potato. Stuff with sloppy joe mixture, cooked chicken & cream sauce, sauteed vegetables with cheese or anything of your choosing. You can microwave stuffed potato again to heat.
