Pear, Orange and Watercress Salad


1 Tbs. orange juice
2 1/2 Tbs. extra-virgin olive oil
2 Bartlett or Comice pears
1 bunch water cress
salt/pepper to taste


Remove large stems from watercress and slice the pears. Put the orange juice, olive oil, salt and pepper in a jar with a secure top. Add pears to salad dressing and coat thoroughly. Arrange watercress on salad plates. Garnish with pears and serve.Serves 4
