Salmon Croquettes

INGREDIENTS

2-15 ounce cans pink salmon
1 small bell pepper, small chop
4 garlic cloves, small chop
1 stalk celery, small chop
1/3 cup walnuts, chopped
1 Tablespoon fresh thyme
2 eggs
2 to 4 Tablespoons flour
1 Tablespoon oil
Salt and pepper to taste
Oil for deep frying

DIRECTIONS

Drain and clean salmon of bones (if you want). Flake salmon and set aside. Heat skillet very hot, add 1 Tablespoon of oil and saute bell pepper, celery and garlic until soft. Add sauteed mixture to flaked salmon along with all other ingredients except the oil reserved for frying. Heat frying oil to 375 F. (Drop small amount of salmon mixture in hot oil to see if it's hot enough.) Shape croquettes/patties any way you prefer and fry on each side approximately 3-4 minutes. Cooking time will vary and depend on size and thickness of salmon patties you create. If you want to reduce the amount of oil retained in the croquettes, fry croquettes 2 minutes on each side (for color) and finish off in 350 F oven for 10-15 minutes. Serve with caramelized onions. Serves 3-5

Carmelized Onions

INGREDIENTS

2 medium onions, julienne
3 Tablespoons oil
3-4 Tablespoons sugar
2 Tablespoons sherry

DIRECTIONS

Heat skillet very hot. Add oil and the onions. Saute onions on high flame for 3 minutes and add sherry. Turn down heat to medium-low, add sugar and stir onions completely. Continue to simmer onions for at least 10 minutes, stirring at least twice. This will cuase the onions to be soft and extremely flavorful.
