Roasted Shrimp with Feta Cheese


1-1/2 pounds large shrimp, peeled and deveined
2 large onions, julienne
3 large tomatoes, seeded and julienne
3 Tablespoons olive oil
1 teaspoon dried oregano
3 stems fresh dill
3/4 pound Feta cheese, large chunks
salt and pepper to taste
2 Tablespoon sherry, optional


Preheat oven to 375°F. Heat large skillet, add olive oil followed by the onions. Sauté for 3-4 minutes. Add tomatoes, oregano and dill. Cook an additional 2 minutes. Pour contents of skillet into a large casserole dish. Top with shrimp and top shrimp with crushed Feta cheese. Pour sherry over everything and bake uncovered for 8-15 minutes depending on size of shrimp. Check frequently. Serve over rice or pasta. Adapted from "Emeril Live," Food Network
