Butter Cookies


1 cup butter, softened
1 cup sugar
1 egg, room temperature
2 Tablespoons orange juice
1 teaspoon vanilla extract
1 teaspoon baking soda
2 1/2 cups flour
Plastic Wrap
Parchment Paper


Mix first 5 ingredients with electric mixer until light and fluffy. Gradually add flour and baking soda until well mixed. Divide and shape dough into 2 balls. Place each dough ball on plastic wrap sprinkled with flour. Wrap up tightly. Chill 2 to 3 hours in refrigerator until firm enough to roll with rolling pin. Pre-heat oven to 400 F. Roll out one ball of dough on floured surface 1/8" to 1/4" thick. Cut out with cookie cutters, sharp edge down. Place cut-outs on cookie sheet lined with parchment paper. (If you can't find parchment paper - just use the cookie sheet UNGREASED) Bake 6-10 minutes until edges of cookies are golden brown.
