Pineapple Bread


½ stick butter, softened
3/4 cup sugar
1 egg, room temperature
1-13+ ounces can crushed pineapple, undrained
1 cup wheat flour
1 cup all purpose flour
1/4 cup wheat germ
1 teaspoon salt
1 Tablespoon baking powder
½ teaspoon baking soda
3/4 cup chopped walnuts
½ cup dried cranberries


Preheat oven to 375° F. Mix together flours, wheat germ, baking powder & soda and salt. Set aside. Cream butter and sugar together with electric mixer until fluffy. Add egg and beat for at least 2-3 minutes. Add crushed pineapple & juice to butter batter and mix together. Add dry ingredients and mix in thoroughly. Incorporate walnuts and dried cranberries. Turn batter into a greased and floured 9X5 loaf pan. Bake in 375° F oven for 50-60 minutes. Check with toothpick or wooden skewer for doneness. Makes 1 loaf
