Rumaki

Almond Date Rumaki
makes 24

INGREDIENTS

24 pitted dates
24 whole almonds, blanched
12 slices of bacon, cut in half
toothpicks

DIRECTIONS

Preheat oven to broil. Slip an almond into each date. Wrap each stuffed date with bacon
and secure with toothpick. Lay rumaki on baking sheet and broil until bacon is crisp.
Serve hot.

Chicken Breast Rumkia
makes 24-30

INGREDIENTS

2-3 chicken breast, cut into 2 inch long strips
15 slices of bacon, cut in half
1 cup orange juice
1/4 cup soy sauce
1/2 teaspoon sesame seed oil
1 teaspoon granulated garlic
1 teaspoon Dijon mustard

DIRECTIONS

Wrap each chicken breast log with 1/2 slice of bacon and secure with a toothpick.
Combine remaining ingredients to make marinade. Marinate chicken logs in refrigerator
for 2 hours.

Preheat oven to 350ºF. Remove chicken logs from marinade and lay out on a baking sheet.
Bake for 10-12 minutes or until chicken logs are done. Serve hot!

Grilled Shrimp Rumaki
makes 12-15 pieces

INGREDIENTS

1/4 cup peanut oil
2 Tablespoons white wine
2 Tablespoons fresh thyme, chopped
1 garlic clove, minced
1 teaspoon fresh ginger, minced
1 pound jumbo shrimp, 12-15 per pound
7 pieces bacon strips, cut in half
toothpicks

DIRECTIONS

Combine oil, wine, thyme, ginger and garlic in small bowl. Add shrimp, cover tightly with
plastic wrap and marinate in refrigerator for no more than 3 hours.

Remove shrimp from refrigerator and wrap each shrimp with a piece of bacon and secure with
toothpick. Grill over hot coals until bacon is crisp usually about 6-8 minutes. You can also broil
in oven for approximately same amount of time.
