Leftover Tostados


1 pound of any leftover cooked or grilled beef, poultry or seafood
1-14 ounce can refried beans
1/2 onion, small chopped
1/2 bell pepper, small chopped
2 Tablespoons oil of your choice
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon granulated garlic
4-6 ounces Queso Fresco cheese or Feta or Farmers cheese, crumbled
4-6 tostados shells


Heat a skillet until hot. Add oil, onions and bell pepper and sauté for 5-6 minutes. Add refried beans and combine with onions and bell peppers. Add cumin, salt and granulated garlic. Heat until mixture is warm. Beans are already done. Take a tostados shell and layer as follows: refried beans, meat product, cheese. Top off with salsa and/or guacamole and thoroughly enjoy.
